Our Scottish Head Chef Martin Black.
After serving an apprenticeship with Thistle Hotels in Aberdeen, Martin has gained 23 years’ experience in hotels and restaurants in Edinburgh, Cheshire, Jersey in the Channel Islands and the New Forest. This was followed by three years in charge of the brasserie kitchen at Luton Hoo and then working across Hertfordshire in different senior chef roles.
Martin is classically French trained and believes in using local produce and suppliers where possible. He also believes in consistently delivering modern pub food which combine fresh ingredients and bags of flavour.
Martin has added some locally sourced lamb, British steaks and cheeses to our menu so far with positive feedback on these new additions.
In his spare time you can find Martin spending it with his young family.

Old Mill Coffee
The Old Mill coffee has been blended locally at Smiths Coffee Co. based in nearby Apsley. We mix a strong Italian with a Sweet expresso to form a strong but very smooth after taste. Most staff have been trained by Smiths, to serve the coffee just the way you want! With a choice of milk, coconut, almond and soya milk, we have coffee for all people.

The Old Mill bitter is our house bitter is 3.8% Golden bitter.
